The last two photos show a cristate form - a rare but natural mutation whereby a rosette develops in this curious, crested shape. People often prize these oddities - some cristate forms can remain stable and be grown on and propagated. Only some varieties produce cristate rosettes, and even then only occasionally. If you don't like them, simply remove the affected rosette.
